Best tasting BBQ Shrimp EVER...Guaranteed


1 lb raw Tiger Shrimp
1 lb raw bacon strips
BBQ sauce

Remove shell of shrimp. Clean shrimp well with cold water.
Cut raw bacon to wrap 1 time around each shrimp. Skewer shrimp and bacon with tooth pick.
Place shrimp on barbecue & smother with desired amount of BBQ sauce (tried them all & Masterpiece BBQ tends to be the best tasting)
Grill until shrimp swell open and color is a nice orange.
Enjoy! This makes a great appetizer.

Serves 12-15


Easy BLT Pizza Appetizer

1 pre-made pizza crust
8 slices ready bacon, diced
1 medium tomato, diced
1 cup shredded spinach lettuce leaves
1/2 cup shredded mozzarella cheese or cheddar cheese
Olive oil

Preheat barbecue grill to medium. Brush pre-made pizza dough lightly with olive oil
Place oiled side down on grill, and cook until lightly browned. Lightly oil top and flip over
Add 1/2 the cheese, 1/2 of the shredded spinach leaves, tomatoes, bacon and then remaining cheese to top and close Barbecue lid.
Allow bottom to brown lightly and for cheese to melt a little (check it every minute or so, as every Houseboat Barbecue grill is different)
Top with other 1/2 of shredded spinach lettuce leaves, cut & serve.

Homemade Granola Bars

1 cup firmly packed brown sugar
3/4 cup margarine, melted
1/4 molasses or honey
1 tsp salt
4 1/2 cups quick oats, uncooked
1/2 cup mini chocolate chips
1/4 cup finely chopped nuts (optional)

Preheat oven to 450 degrees. Combine brown sugar, melted margarine, molasses or honey, and salt in a large mixing bowl, mixing until well blended. Add oats, chocolate chips, & nuts (optional). Mix well. Press firmly onto a large greased cookie sheet with sides until about 1/2 inch thick. Bake at 450 for 8-10 minutes or until golden brown. Cool thoroughly.
Cut into 16 bars.


Quick Mexican Snack Pizzas

4 corn tortillas- 6”
2/3 cup pizza sauce
1 cup grated cheddar cheese
2 tomatoes, sliced
½ cup browned ground beef
1/3 cup chopped cilantro
¼ cup diced onion
Sour cream
Guacamole

Preheat oven to 350 degrees. Lay the tortillas on a greased cookie sheet.
Spoon 1/4 of the pizza sauce onto each tortilla. Sprinkle 1/4 of the cheese, ground beef, cilantro and onion on top of the sauce. Then, place 1/4 of the tomatoes on each pizza.
Bake for 5-10 min. until the cheese is completely melted.
Serve warm with sour cream and guacamole.


The Dip

1 stick of butter
1 medium onion; chopped
2 10oz boxes of thawed and drained chopped spinach
1 16oz container of thawed hot or extra hot green chilies
3 small jars of marinated artichokes drained and diced
8oz cream cheese
8oz sour cream
2 cups shredded Monterrey Jack cheese
2 cups shredded Parmesan cheese
Salt and pepper to taste

Melt butter and add onions, cook until clear. Add spinach, artichokes and green chilies. Cook until it bubbles. Add cream cheese, sour cream, Monterrey Jack and parmesan cheese. Cook and continue to stir until melted. Pour into a 9x13 pan. Bake for 15-20 minutes at 350 until bubbly and brown.
